Double punch of Umami with Amazake and Miso
Vegetables marinated in Amazake (sweet sake) and Miso
○Ingredients【2 persons】
Cucumber…………… 1
Turnip…………… 2
Radish…………… 3
White radish sprouts…………… 1 package
Amazake (sweet sake) ……………200cc
Miso ……………2 table spoons
Salt
○ How to make
1 Divide the cucumber into 3 even pieces, smash these with the flat side of your kitchen knife. Thickly peel the skin off the turnip and divide it into 6 wedges. Mix the cucumber pieces and turnip wedges together into a bowl with 1 table spoon of salt. Leave for about 10 minutes to remove water from the vegetables. Afterwards, rub, wash and squeeze the vegetables tightly. Cut the top and bottom parts of the radishes and divide them vertically into 4 pieces. Wash the white radish sprouts and divide into 3 batches.
2 Add all the vegetables into a bowl.
3 Mix amazake and miso together and add to the bowl to marinate the vegetables.
